A Touch of Realism

Talking to a GF friend today, she was recounting an allergic reaction to mushrooms she had awhile back. She trusted the menu at a favorite restaurant and tried a new appetizer, without asking if any of her forbidden ingredients were included. (A good reminder to me!)

She said “I should have known it had something I couldn’t eat when it tasted so good!”

Tuna Without the “Melt”

Tuna was on the menu today.

I must say that tuna salad has been one of those easy meals that suddenly became complicated when I could no longer doctor it up with mayonnaise, pickles, or even a touch of melted cheese on bread.

So, I have limited tuna to a green salad complement…until today.

I told Mom my dilemma about how to make it interesting and she suggested I add a touch of lemon or lime. It was quite good. I would definitely make it again, but next time I would add more olive oil.

Tuna Salad

Organic tuna
Finely chopped green onion, cucumber, and celery
Sea salt
Olive oil

Mix together. Serve over a large leaf of lettuce.

Now wouldn’t it be once if I could turn this tuna salad into a tuna melt?

84 Years

My father-in-law loves Chinese food. He also had a birthday last Saturday – 84 years old! The majority of our family was around to celebrate with him. Putting all of that together, nieces, aunt, and sister-in-law prepared a Chinese feast to celebrate.

One stir-fry just didn’t seem like enough – that’s what you do in a hurry after a long day of work, right? – so in addition to the Costco Egg Rolls and Pot Stickers, which he loves, we made a huge bowl full of Jasmine brown rice, and three Asian dishes: Sweet and Sour Pork, Spicy Peanut Chicken, and Filipino Beef Stir-fry.

I couldn’t eat the Costco items, nor the sweet items, but I now have two new recipes that fit perfectly into my diet when the sugar is left out and the soy sauce is substitutes with Bragg’s Liquid Aminos.

Try them. They are delicious.
